Breakfast Chili Reino

Cheesy eggs with green chilies.

Ingredients

Directions

  1. Put cream cheese, sour cream, egg yokes and eggs whites in blender. Blend until well mixed and fluffy.
  2. Spray casserole dish with cooking spray.
  3. Drain liquid from chilies and place chilies in casserole dish.
  4. Add egg mixture then top with cheddar and monterey jack cheeses.
  5. Cook in oven at 375° F (200° C) for 30-45 minutes until firm and slightly browned.

Not sure what diet this is good for. Sounds yummy though. I would use egg whites, neufchatel, non fat cheeses and low or non fat sour cream. high calories though.

I made 1/2 the recipe for my husband & me (South Beach Phase I). Used 5 whole eggs. Used Pepper Jack cheese (Kraft brand) in place of the chilies & monterey cheese. Served with salsa. Yum!
I just made a half recipe of this, oh my goodness it is so good!!

oooh this was tasty! But, be aware of how much cheese is in the recipe. For the aktins induction, the amount of cheese is too high- (only 3-4 oz daily)
