Crustless Chicken Pizza
A great way to enjoy your favorite Italian-American dish without the bread.
Ingredients
Directions
- Sauté garlic (onion optional) in olive oil. When golden brown add, tomato paste, pasta sauce, oregano, salt and pepper. Bring to a boil. Place on medium heat.
- Take the chicken breasts and tenderize with a meat tenderizer, pounding them until thin (tip: spray clear wrap with non-stick spray and wrap chicken before tenderizing for quick clean up and no "sticky" trouble).
- Season chicken with salt and pepper. You can also sprinkle a little garlic powder and parmesan cheese if you like.
- Place chicken "crusts" on greased baking sheet. Top with sauce mixture. Sprinkle with mozzarella cheese and top with anything else you enjoy on your pizza.
- Bake at 350 °F (175 °C) for 30 minutes or until chicken is cooked through. Allow to cool and enjoy!

This sound really good, can't wait to try! My only suggestion is to use homemade or pre-made sugar free pasta sauce if on Atkins or South beach, and maybe cut back a little on the amount.

I'm going to try this, this week. I might cut cheese(ack, that doesn't sound good)to half that amount though!

Great recipe - perfect for my diet
The nutrition facts are counted wrong, looks like the nurtition is calculated for the whole dish which looks like it would serve 4 - so dive by 4 or the number of serving you eat...

Love this one and my kids eat it up...just switch the cheese for Fat Free Mozzarella (Kraft is the only one i can find that is Fat Free)...if you want to reduce a bit more use Light pizza sauce.
