This recipe is very good, I also added fresh tomatoes and substituted vegetable oil with canola oil and used brown rice instead of white rice to make it healthier according to the Flex Plan.

recipe is very good...substituted vegetable oil with olive oil.. i used brown rice and added red and yellow peppers...

Make it with Basmati rice and olive oil and this would be perfect for GI.
