This recipe is very good, I also added fresh tomatoes and substituted vegetable oil with canola oil and used brown rice instead of white rice to make it healthier according to the Flex Plan.

Make it with Basmati rice and olive oil and this would be perfect for GI.

This looks good, however the portion seems to be very large (checking the chicken used, it appears to be 2.5 lbs of chicken to start with) I would cut the recipe in 1/2 to feed my family of 4 (DH likes a large serving!!)
