Directions
- Mix together pepper, salt, and flour. Coat chicken with seasoned flour.
- In heavy-bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides, then remove and set aside.
- To skillet, add wine and stir until heated. Add juice, stock, and mushrooms. Stir, reduce heat, and cook for about 10 minutes, until sauce is partially reduced.
- Return browned chicken breasts to skillet. Spoon sauce over chicken.
- Cover and cook for about 5–10 minutes or until chicken is done.
- Serve sauce over chicken. Garnish with chopped parsley.

use soy flour instead of wheat flour and skip the lemon juice and it will be even better for Atkins

Instead of coating the chicken with flour, try adding a tablespoon of cornstarch disolved in a little cold water for thickining. No lemon juice required. Hubby makes it like this & it's just fantanstic.

Lemon juice is allowed on Atkins. I would just skip the flour altogether.

sounds delicious but absolutely not suitable for atkins induction phase. I would definitely make this if I wasn't on Atkins.

This looks good, and I might try it, but would probably substitute whole grain flour for the white flour called for in the original recipe.

Very good! Left me wanting more mushrooms so I will add next time. This recipe is definitely a keeper!

I really enjoyed the taste of this. I didn't think I would because I don't like wine and I didn't like the taste of it by itself for definite. I cooked it for the first time and unlike most of my first times, it turn out well. Even my parents liked that I brought it over and cooked it at their home.
