A quick and very filling soup that doubles as a meal.
Ingredients
Directions
- Cook onion, celery and garlic in olive oil over medium-high heat until soft.
- Add chicken broth, black beans, coriander and cayenne pepper. Simmer uncovered, about 10 minutes.
- Stir in balsamic vinegar.
- Serve warm and garnish with cilantro.
- Note: optional to take soup (when cooled) and transfer to blender and process to smooth consistency. Serve warmed.

This soup is awesome, I garnished it with a dallop of nonfat yogurt and fresh cilantro. I did garnish with tsp of cheese, but I did that before tasting it and it certainly did not need it. I did not have celery and used green bell pepper instead. I used chicken bouillion and drained canned black beans. My kids and husband loved it as well. I will be making this again soon

Only 7.6g net carbs per serving if you take out the balsamic vinegar, 7.8g with the vinegar. Great for OWL phase of Atkins once you have reintroduced beans.

Great recipe! For fewer carbs, use black soy beans instead of normal black beans. Black soy beans have just 1 net carb per serving!

This soup was great! I didn't have coriander or cayenne pepper, so I just left them out. (I'm definitely not a "cook"!) But it was delicious anyway! My 1 year old daughter enjoyed it too!
