Roasted Vegetables

Mixed vegetables in the oven with a little olive oil. So simple and perfect for summer.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. In a bowl, lightly coat the mushrooms, squash, peppers, asparagus and onion in the olive oil and seasoning.
  3. Place the veggies on a non-stick tray and roast for around 25 minutes stirring regularly.
  4. Roast until veggies are tender and lightly browned.

These tasted great!! I was in need of something other than a salad. I added cherry tomatoes, which tasted great!

I tried this and it was fantastic!! I added a tad of cream corn and black beans, and put it in a glass baking dish, so it turned out more likea casserole. the whole family LOVED IT!

i used about 1/2 cup veg broth and no oil or seasoning i didn't have the yellow onion so i added a beet instead very good!
i tried this recipie last night...it was sooooo good. thanks
husband and I loved it instead of salt and pepper I used mrs. dash garlic and herb. Was wonderful
