Makes one large spinach patty or divide to make smaller ones.

Directions
- Drain spinach really well. You can use a potato ricer.
- Put all ingredients in a bowl and mix well.
- Spray skillet with cooking spray (such as Pam) or olive oil.
- Flatten the spinach mix in the pan.
- Cook for 8-10 minutes on medium heat.
- If needed, garnish with low fat ranch dressing.

I just made this for lunch. Its kind of boring and a bit bland but this has serious potential! I will make this again this weekend and add reduced fat swiss instead of Parmesan and add some mushrooms, garlic and onion. I think then it would be so yummy! It is very quick and easy to make, I just think it would be much better with a few tweaks. Thanks for the great idea!

I use to saute spinich quite often and hubby loves it. I would garlic to this! sounds like a great side dish
