Minty Mistletoe Cookies
Yummy cookies to satisfy your sweet tooth.
Ingredients
Directions
- Preheat oven to 300° F (150° C). Coat non-stick baking sheet with non-stick cooking spray.
- In a large bowl add: 4 drops green food coloring, egg whites, vanilla and mint extracts. Beat with an electric mixer until soft peaks form.
- Gradually beat in the sugar until stiff peaks form.
- Fold in the chocolate chips.
- Drop by tablespoonfuls onto the baking sheet.
- Bake for 10 minutes. Turn off oven but leave the cookies in the oven until cool.

I would suggest substituting xylitol or splenda for the sugar, as well.
