Minty Mistletoe Cookies

Yummy cookies to satisfy your sweet tooth.

Ingredients

Directions

  1. Preheat oven to 300° F (150° C). Coat non-stick baking sheet with non-stick cooking spray.
  2. In a large bowl add: 4 drops green food coloring, egg whites, vanilla and mint extracts. Beat with an electric mixer until soft peaks form.
  3. Gradually beat in the sugar until stiff peaks form.
  4. Fold in the chocolate chips.
  5. Drop by tablespoonfuls onto the baking sheet.
  6. Bake for 10 minutes. Turn off oven but leave the cookies in the oven until cool.

I would suggest substituting xylitol or splenda for the sugar, as well.
