Lovely natural brown rice pudding made with wholesome ingredients.
Ingredients
Directions
- Whisk milk and cornstarch together in a medium saucepan.
- Add cooked rice, maple syrup, raisins, almonds (if desired) cinnamon, nutmeg and ginger.
- Simmer over medium heat for 4 minutes, stirring constantly.
- Remove from heat and stir in vanilla.
- Let sit for at least 15 minutes to allow it to set.
- Chill if desired to serve cold, or serve warm.

I gave this recipe 5 stars because for a simple and nutritious breakfast/afternoon snack it is wonderful! It wasn't the best thing I ever tasted or anything but considering it took about 5 minutes to cook (because I had left over brown rice from dinner) it was very good:) I will definitely make this a staple in my home! Great way to use left overs, save money, and not waste food (which is my pet peeve!!) Thanks for sharing this recipe!
