Yummy home-made salsa that's better than anything you can buy in a jar.
Ingredients
Directions
- Line a rimmed cookie sheet with foil. Spray the foil with a non-stick spray. Turn the broiler on to pre-heat.
- Slice onion in half then quarters. Use only two of the quarters. Slice tomatoes in half length-wise. Peel two cloves of garlic. Place all the onions, tomatoes, and garlic on the cookie sheet. Make sure tomatoes are skin side down.
- Slice peppers in half length-wise and remove the seeds. (Use gloves if you don't want the hot oil from the peppers on your hands for the next few hours!) Add the peppers to the cookie sheet.
- Drizzle the vegetables with olive oil and broil the vegetables for approximately 5-15 minutes or until the vegetables begin to char.
- Once charred, remove from the oven and set out to cool.
- Once cooled, add all the vegetables to a blender along with the cilantro and lime juice.
- Salt and pepper to taste and blend to your preferred texture. Enjoy!

This was a perfect sauce for making enchiladas. My non-veggie eating husband enjoyed it as well. This is a reapl keeper! As for OWL just keep in mind to measure what you put on your own plate.
