Good morning everyone! New low on the scale, it's been a good week! I've been keeping my intake around 1500/day, and getting those miles in! I have walked four miles this week, then last night I did thirty minutes on the precor followed by three miles on the bike, so in challenge miles that's seven. Not too shabby. Just trying to get the swing of tracking miles, for the moment it's a new exciting way to look at fitness. I also did my upper body strength training while I was at the gym. Muscles, rawr! A little sore today.

I have been doing pretty well making good eating choices. Last night we did breakfast for dinner (much to the excitement of my children). I opted for sausage, eggs, and an English muffin but I also made blueberry waffles for my husband and kids. I'm amazed at how easy it was to say no to the waffle. Carbs don't have a hold on me, as of this moment.

Sandwiches... I have been meaning to share this thought but keep forgetting. I love sandwiches but I always know that one isn't going to be enough. Instead of having two and adding twice the carbs I go open face and just double the protein instead. Yesterday it was BBQ pork, which is why the thought was fresh in my head. Every sandwich is a knife and fork sandwich for this girl lol.

I also kept forgetting to tell everyone how proud I was of myself when I went to the children's hospital Monday. We ate lunch in the cafeteria, which has anything you could ever want. Pizza, meatloaf, burgers, ev-er-y-thing. I had a tuna sandwich and a light salad. Great choices, and I was very excited. I haven't perfected it yet, but I'm still working on the 'food as fuel' instead of 'food is my whole entire world'. And I think I'm doing alright.

Working twelve hours today, but with the weekend on the horizon I think I'll be able to manage just fine. Have to get ready to pack up my meals and get the kiddos up and dressed.

Congrats! On the waffle - even if you had some - you'd find you didn't need or want the butter & syrup as in the past - or at least it's that way for me.. now that I have so little processed food my taste buds are working again. Lettuce wraps make great ways to have the sandwich w/o the bread too - romaine hearts are crispy so you get that 'crunch' w/o chips. Just a thought when there's a great protein around and you want to eat with your hands. But that's sharing, not advising.. you're doing wonderful!
