A delicious alternative to mashed potatoes.
Ingredients
Directions
- Preheat oven to 400° F (200° C). Fill large stock pan with water and salt to taste bring to a boil.
- Trim hard stems and leaves from cauliflower. Cut flowerets from stem (discard stem) and place in rolling boil of salted water for 15 minutes until tender. Drain well.
- Place hot cauliflower in food processor with large blade. Pulse while adding butter and heavy cream. Add salt and pepper to taste.
- Spoon mash into 1-quart oven-proof casserole dish and sprinkle with American cheese.
- Dash top of casserole with paprika. Place in oven, bake for 15-20 minutes and serve hot.

This is a great recipe for the Atkins induction phase. The people commenting above are on different diets and avoiding fats. This looks pretty tasty and great for induction.

I've made something very similar and found it to be excellent for induction! You could always cut out the cream and butter and replace with light sour cream or whatever kind of butter substitute you use. In my opionin it's a really great alternative to mashed potatoes!
