Bruschetta Chicken Bake

Hearty and tasty chicken bake that makes for a pleasing easy dinner.

Ingredients

Directions

  1. Pre-heat oven to 400 °F (200 °C).
  2. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.
  3. Place chicken in 13 x 9" baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.
  4. Bake 30 minutes or until chicken is cooked through.
  5. Serve with a side salad or some steamed vegetables.

This is a great Kraft recipe that we have used for years. The Kraft website show a higher calorie count then this shows in my food diary.

I saw this recipe yesterday and decided to make it to bring to as an after service snack at my church. It was a big hit. I didn't have canned tomatoes so I used drained, chopped, sun dried tomato, ~ 2c. I used more chicken (8 thighs deboned, skinned, and trimmed of almost all visible fat as well as 10 or so chicken tenders), but kept the other proportions the same. I didn't get to serve it nice and hot, but even just slightly reheated in the oven it got demolished. I'd definitely make this again.

I cooked this tonight and I loved it. It was easy AND my kids loved it too

This is an easy to make meal even for people on the go. I did customize it a little adding some of my own spices and herbs to taste. I haven't tried so yet, but I would imagine that some onions and peppers (maybe even some carrots) would go well mixed in this dish.

This was not at all what I expected it was so yummy my family loved it will for sure be making it again. So easy and quick to prepare. A keeper for sure!:)

Awesome meal for the family. I added some onion and mushrooms to the top and it was delicious!

Everyone loved this. Next time I think I'll use a different cheese and broil the top for a few minutes after baking. I think a nice crunchy crust on top would really take it to the next level. But an all around great meal.

It was a fast meal, but not as good as I had hoped. My daughters wouldn't eat it. Although I ate it, it was mainly because I hate wasting food and I knew it was fairly healthy. I think it needed more flavor in the chicken, and simply using basil didn't do it for me.
