Autumn Vegetables

Healthy, vegan side dish.

Ingredients

Directions

  1. Chop onions and mushrooms, sauté in a pan with olive oil over medium heat, and cook for 5-10 minutes.
  2. Cut squash in pieces and add to the pan.
  3. Add peas, mix and cover with lid. Cook on low heat for 15 minutes.
  4. Boil potatoes in a separate pan with water until done. Cut in squares and add to the other vegetables.
  5. Season as desired and turn off heat.
