Spring is here! Going to have a planned cheat meal after the gym on Saturday. I'm bustin' out the smoker and having a family BBQ in celebration of the arrival of the warm weather.

Now you’re talking my style, BBQ!!! Love the stuff. What are yall going to smoke? You have to make some atomic buffalo turds. Jalapeno cut in half, filled with cream cheese, then put a little smokey sausage on top and wrap with bacon. Smoke until the bacon is how you like it. They are delicious. Another one of my favs is a smoked fatty. Just take your favorite breakfast sausage such as owens or jimmy dean. Unwrap but keep it in the log shape. Season the outside and place on the smoker until an internal temp of 160. Slice and serve, it is delicious!

buffalo turds!!! Too funny. I had something similar at Christmas. I happened to get a piece that they didn't get all the seeds out. A bit on the hot side, but still good.

Probably going to do Hickory smoked Beef brisket with home made honey bbq sauce in wraps with slaw, smoked baked beans and home made corn bread with maple butter.

I love how BBQ varies so much by region. In Texas you would be hung for using hickory on a brisket. (Although I’m sure it’s fantastic) Down here it’s always either oak or mesquite or a combination of the two for beef. Those fancy woods like hickory, apple, cherry and peach is all for pork if you ask a Texan. It does not mean in any way that we are right about it, it’s just how it is. This is another reason I love BBQ!! BBQ by regions is going to be a vacation I plan at some point during my retirement!

Speak the truth, Bigbassbrent! I'm a Texan through and through. Mesquite is to beef what no beans is to chili...it's just the way it's supposed to be (lol). :D

I reserve sweet woods for game Meats, IE Venison, duck, goose, etc. But yes Hickory is my personal Fav for Beef. Bacon wrapped Filet, prime example (pun intended). :)

you folks need to come up and visit sometime. i live about 20 minutes from the best bbq in the world (according to anthony bourdain), oklahoma joe's - best brisket i've ever had...

I was born in New Mexico, but raised in Texas. ( Muleshoe to be exact) now live in Rusk, Texas. Texan at heart. Love BBQ, but just had VSG surgery so BBQ is out of the question right now. My time will come. I have about 100 lbs to lose. Should happen fairly quick( maybe 8 months or so) then some of that great BBQ ever now and then.

I love me some food porn too, Bigbassbrent! I knew I was in trouble when I described a 'croissant chocolat' and a girlfriend said, "You make it sound better than sex?!?" I actually stood there for two heartbeats and thought, "No wonder I'm a fatgirl" (LOL) Now I'm committed to losing the fatgirl although her excellent Texas Tastebuds will remain with me F-O-R-E-V-A-H!
