Southwest Stuffed Red Peppers
Super tasty and fancy red peppers stuffed with beef, rice, corn, tomato and salsa.
Ingredients
Directions
- Combine frozen corn, salsa, rice and ground beef adding salt and pepper to taste.
- Cut peppers in half and clean. Stuff mixture into pepper halves and place in a deep dish pan.
- Cover stuffed peppers with the can of crushed/diced tomatoes and bake in the oven for approx 45 minutes at 400 °F (200 °C).
- Note: this dish also works great in a crockpot.

I'm assuming the rice is cooked before you put it in the peppers ? So 1/2 pepper is a serving?

I had to cut back on the ground beef and adjust a bit to work it out, but I've made them twice already and I think they’re GRRREAT! And with HOT salsa, they're fantastic! Great job, mrsjohnson0317!

This was delicious! I used lean ground turkey and I did cook the turkey and rice before assembly. I accidentally added an 8oz can of tomato sauce to the meat, but it was good. I seasoned the meat with garlic powder, cayenne pepper, onion flakes, dried cilantro. It was very tasty!

I used lean ground turkey and it turned out great! The mixture was yummy even without the red peppers - which is what I had for lunch and added some tortilla chips and some mexican style shredded cheese.

Try about half as much meat, and even ground turkey instead. also brown rice is better for you
