Pork Medallions with Marsala
Tenderloin pork skillet simmered with marsala wine.
Ingredients
Directions
- Lightly dust pork with flour.
- Heat oil in large skillet over medium-high heat until hot.
- Add pork slices; cook 3 minutes per side or until browned.
- Remove from pan. Reduce heat to medium.
- Add garlic to skillet; cook and stir 1 minute. Add wine and pork; cook 3 minutes or until pork is barely pink in center.
- Remove pork from skillet. Stir in parsley. Simmer wine mixture until slightly thickened, 2 to 3 minutes.
- Tip: For a special touch, sprinkle with chopped red onion just before serving.

This was GREAT!!!. Served it with Cheesy Cauliflower Au Gratin (104 cal). Great meal and the wife loved it.

I used red wine (I know, I know!) and I substituted basil for parsley but it was fantastic! I would never normally pair red wine with pork but it worked really well. I'm sure with marsala it would be even better. Great recipe!

This was excellent and my kids even enjoyed it!! I sauteed some sliced white mushrooms in with the pork as it was finishing and enjoyed it with mashed cauliflower and green beans. Probably the most colorful, well rounded meal we have had in awhile.
