Huevos Rancheros (No Tortilla)

This is a great diet version of this yummy Mexican breakfast.

Ingredients

Directions

  1. Separate yolks from egg whites.
  2. Fry egg whites in a small sauce pan using pan spray on medium heat.
  3. Once the top of the egg begins to firm, flip over and fry the other side about 3 minutes.
  4. Once egg is cooked and slightly golden on both sides remove to a plate.
  5. Place black beans in same pan and heat.
  6. Place beans on egg tortilla.
  7. Place salsa on top of beans and top with fresh avocado or guacamole.
  8. Note: avocado is substituted for oil which brings down the calories.
