Ingredients
Directions
- Preheat oven to 400 °F (200 °C). Add one tablespoon of olive oil to skillet, and add package of spinach. Cook until wilted.
- Squeeze water out of spinach in a clean towel and set aside.
- Add the other tablespoon of olive oil to skillet and sauté onions, mushrooms, add garlic until soft. Add ham chopped into cubes.
- Add spinach and incorporate all ingredients together.
- Scramble egg (with a splash of milk) and pour over spinach and vegetables. Turn heat down and let cook until egg starts to get solid at the top.
- Remove from heat, sprinkle parmesan cheese and cheddar cheese and put in the oven for 5-7 minutes. Remove when bubbly and brown.

Yumm, spinach, I make a Frittata with zucchini, pork sausage (hot) & pepper jack cheese (spicy) but oh sooo good. Going to try this for
