Back down to my new low again this morning - I should think so too after yesterday's low cal day, which I did find quite hard-going!

I was planning on making my Lime Fish Skewers for dinner last night. Hubby usually chops the veg for me, and I asked him to cut the pepper into cubes. Bad description with hindsight! Rather than the 1-inch skewer-sized pieces I meant, he'd cut it into tiny little pieces - OK, cubes. My first thought was - it's a DISASTER, dinner is RUINED!! However, I took a deep breath, thought about it for a few moments, then turned Lime Fish Skewers into Lime Fish Stir-Fry - which actually turned out to be even better!!

On the activity front, I'm obviously still under doctor's orders to rest and refrain from exercise. However, it was such a beautiful day, I did go out for a lovely leisurely walk after lunch, which made me feel really good!

My friend came over for a first viewing of my new eyes last night, and was amazed by how much they've healed already. She is a personal injury solicitor, so she's used to seeing some fairly horrific injuries, but still, it was nice to hear that I only look 25% weird now!!

Awh, poor hubby... he was only trying to help, lol. It's o.k. once, I was running late getting home and I had asked my hubby to throw the steaks on the grill... well, he did and he seasoned them w/ a kazillion carbs!!! I couldn't eat mine. At first I was mad at him but I didn't want him to know... so I just didn't eat!! Glad your eyes are healing up!!

When life hands you lemons...you make lemonaid...and when hubby hands you microscopic pepper cubes...you make lime fish stir-fry...sounds delicious! You didn't sweat the small stuff(literaly...small stuff) You are a great wife.

Thanks girls - I couldn't be cross with him, he's such a sweetie, and was really proud of his neat little cubes of pepper!

How funny! They try their best with that stuff sometimes and we have to roll with it. Congrats on your 145!

WOW......darlin'.....65 POUNDS - GONE!!! You have done incredibly well.....! And getting ever closer to that blue line.....YEAH....! and the lime fish stir fry sounds delightful.....love to have your recipe! Keep up the awesome efforts and stick with the docs orders and avoid anything strenuous.....! huggies!

Way to go with making the best of the situation. And you were rewarded with finding a better way to make your recipe in the end! Yay! Nice to hear you only look "25% weird" - lol. You must be getting excited to see what the final outcome will be.

Thank you all! Deb - check out my Cook Book for the bones of that recipe. The only changes I made were to stir-fry the fish and pepper in a bit of spray oil for around 10 mintes, and then to stir in the sauce and heat for a couple of minutes.
