I have seen recipes for chocolate bean cake using Splenda but I've never tried it.

You must, must, must try the South Beach black bean brownies. They are Phase 1 unless you add stuff like dark chocolate chips. I posted it as a recipe but it takes a while to get approved. It is 1 can black beans (rinsed and drained), 4 eggs, 1 cup Splenda, 2 Tbsp olive oil, 3 Tbsp cocoa powder, 1 tsp vanilla, 1 tsp baking powder. Blend in blender, put in greased 8 x 8 pan, and bake for 30 minutes at 350. Wonderful!

OMG I'm SO going to try that! Thank you very much! I think I'll get the GOOD stuff (Ghiradelli cocoa) for this. :)

I bet it would be even better if you add walnuts to it. I'm going to try this recipe!

We have nuts, and I totally didn't add them in.. mainly because of my little one.. But I think next time I will. it'll be my special batch. I made them tonight, and they were totally worth it. Thank you so much for this!
