Feeling much better emotionally today. I think I'm bouncing back quicker from when I receive the bad fertility news than in the past. I'm sure I'll have some relapses during the day, but right now, I feel pretty good. Not sure if everyone who posted to my journal yesterday saw my response, but THANK YOU for all your kind words and support, it meant a great deal to me.

Today is actually the first day I am not wearing a sweater over my outfit at work, and haven't felt self conscious about my body, my arms in particular.

The hubby gave me a recipe that he created for southwestern type gumbo…that was soooooo good! And very little points. I made it last night, and it was absolutely delicious. Here it is…I'll try and enter it in the recipes section on this site over the weekend. Seriously YUMMY.

SOUTHWESTERN GUMBO
1 Raw Chicken breast, diced (4oz)
2 Chicken Sausage, diced (we use Casual Gourmet, Tomato, Basil & Mozzarella Chicken Sausage from Costco's)
8 Raw Jumbo Shrimp (cut into pieces)
1 onion diced
1 red pepper diced
2 Italian green peppers diced
1 jalapeno diced (with or without seeds, depending on your preference)
1 tomato diced
1 Cup Fat-Free, Low sodium Chicken Broth
1 tbsp garlic
Okra, cut into dime size shapes - not too thin (not sure of how much, but I used enough to fill 1/2 of a plastic food bag at the store)
2 ears of cooked corn - kernels stripped off
Salt to taste
1 tsp pepper
1 tsp coriander
1 tsp chili powder
1 tsp cumin
1 tsp Chipotle Tabasco sauce :)


Sauté onions first, add some salt to soften them up, approx 5-10 minutes. Add peppers (red, Italian, and jalapenos) cook for 5 minutes. Add okra cook for 5 minutes, slowly adding broth until okra is tender, then add the tomato cook for 3 minutes Add all of the spices Add chicken sausages, chicken, and shrimp Cook until the meat is done.

Good to hear your spirits are up :) Yay for going sweaterless at work! That's an accomplishment worth celebrating. Your recipe sounds yummy. I have made something similar in the past and it was very good so I can imagine this would be tasty, too.

You're doing fabulous, darling! :) Keep on kickin' it up and take it one day at a time. Glad to hear you are in better spirits, too. :) I'll never forget the hormones... they are truly nasty! My good friend on here, "miteslur" and I would refer to hormones, as "our whores-a-maonin'" LOL =D Just remember, that it's a phase that you are traveling through and will come out on top! Keep on kickin' it up!! :)

That Gumbo sounds delicious... I'll have to try it sometime! Glad you're feeling better today, and really glad to hear about the rising confidence in being able to go to work without a sweater today! Have a great day-- you deserve it!!
