I had one serving of white rice (or a little less even) at dinner. They rest of my food choice throughout the day were excellent. Well, i did put .5-1 TBSP of maple syrup in my homemade oatmeal. But, seriously made great choices. However, I think my dinner may have been too salty (especially combined with the salt I have been adding to my water), because I'm suddenly 1.6lb heaver :( womp womp.
The past two mornings, I have been getting up with my husband to have breakfast togehter. This is 1-1.5 hours earlier than I normally get up. I've also avoided taking a nap when my daugther goes down for her mid-morning nap. I'm trying to train myself to go to bed earlier. I can't keep staying up to 2-3 in the morning.
Today, I'm making chocolate chip cookies for my husband. I'm trying to figure out how many I can have. One today, one tomorrow, one on Xmas? I'm making paella tomorrow (Xmas eve). I've never made it before, but I wanted to make a special Spanish meal for the holiday. I'm making my own seafood stock for it. I have made the stock once before, and it was incredible. And, I have shrimp, mussels, and clams to go in the paella.
I want to make on indugent dish for Christmas day dinner - scalloped potatos or mac & cheese...tough choices. I'm leaning towards make and cheese but it all depends on whether I can find a good chedder or not (not an easy product to find in Cartagena). My husband is making pancakes Christmas morning. :( I don't want to eat them, but that's what he wants to do. So, I thinking I'll have then make eggs to supplement.

I had 2 small gin & tonics today yesterday and they made me feel yucky. :( I guess I was over confident about the impact of adding salt to my water.
Also, went to a street food open air market. I had 1.5 samosas (deep fried Indian dumpling) - so delicious. I had 2-3 small bites of my husbands burger. I made a double batch of bourbon balls for my husband to take to work. I ate 3 small ones. I feel good about having a few cheats but also keeping the portions at an acceptable level. This is what most days should be like - actively choosing good whole foods but also allowing myself to sample some indulgent foods here and there.

Gotta love how the water weights comes off the first few days. 3.2lbs in 3 days.
However, I've been struggling with dehydration (despite drinking 100oz of water daily). I did some research tonight and I learned that low carb dieters need to up thier sodium intake to adjust for the water weight loss. I read that we also lose a lot of water in sleep through our mouths...water vapor... which would why I wake up at 4 or 5 or 6 am feeling terrible. I drink two large glasses of water and then I'm able to get back to sleep. I'm not techincally eating low carb. I'm eating low processed foods. No fruits and veggies are off limits. But am eating very little grains/pasta/rice etc. Occasionally, I'll have a sandwich on a whole grain sandwhich thin bun. And, I will have oatmeal (homemade) a couple mornings and I am trying to have a serving of beans each day.
So, I've put a little salt in my water. Hopefully, that helps.
Has any one experienced similar problems?
