Turkey Enchilada Casserole
Sensational layered tortillas and ground turkey with enchilada sauce and reduced fat cheese.
Ingredients
Directions
- In a 5 to 6-quart pan over high heat, stir turkey, onion, garlic, oregano, and cumin in oil until turkey is crumbly and no longer pink, about 4 minutes.
- Stir in 1 cup enchilada sauce. Add salt to taste.
- Meanwhile, cut tortillas in half. Arrange a fourth of the halves evenly over the bottom of a shallow 3-quart casserole, overlapping to fit.
- Sprinkle a 1/4 of the cheese evenly over the tortillas, then top with 1/3 of the turkey mixture and a 1/4 of the remaining enchilada sauce, spreading each level.
- Repeat to make two more layers of tortillas, cheese, turkey mixture, and sauce; top with another layer of tortillas and sauce, then cheese.
- Bake in a 425° F (210° C) regular or convection oven until cheese is melted and casserole is hot in the center, 18 to 20 minutes.
- Sprinkle with chopped cilantro.

If there was a six start rating I would have given it 6 stars. This was wonderful. I omitted oregano (was out) and up'd the cumin to about 1 tsp and topped it w/ a dollup of daisy lite sour cream...AWESOME!!! Thanks for the recipe.

A little bland...I added fat free sour cream on top and next time I think I will put maybe black beans in it or lettuce and tomato on top.

I made this for my picky Hispanic husband (in place of the homemade beef enchiladas I usually make). I didn't use a canned enchilada sauce, but chose to make the one I usually do for the beef version (that way, I could control the salt content & flavor). I thought it was "okay". Husband gave it a 3.5 (out of 5). We didn't care too much for the oregano in the turkey, but I know it was there to help spruce up the turkey (since turkey is so bland). Next time, I might try jazzing it up a bit with different peppers and TRY to give the turkey more flavor. Definitely healthier than the greasy variety you find elsewhere though. I'll try again and hopefully make my husband give it at least a 4 next time.

Excellent!. My husband wanted me to roll enchiladas for a real feel mexican dinner. The meat seasoning made the meal.

This was great!! Husband liked it too....i did add a can of diced tomatos with chilis to give a bit of a kick to the enchilada sauce....and I only used 8 tortillas.....will make individual portions next time as this made more than enough for 2 meals (or more).
