Chicken Asparagus Soup

Flavorful and low in fat and calories, this is a great (and very filling) addition to any meal.

Ingredients

Directions

  1. Melt butter over medium heat, then mix in flour. Add in diced onion and sauté for 3 minutes.
  2. Add in both cans of asparagus pieces (without draining) and four cups of chicken broth. Let simmer for 20 minutes.
  3. Ladle small portions of the soup into a blender and puree.
  4. Add salt and pepper to taste.
  5. Optional: to make the soup as your meal, add in a cup of heavy cream or half and half.

For phase 1, leave out the butter and flour and just saute the onions in a little bit of olive oil.

I haven't tried this recipe, but I think I would like it, but I would add 3 oz. chicken breast. If you add cream, I would suggest Fat Free half and half, maybe a half cup. The points for this according to nutritional facts, without the cream and chicken, would be 2 points per serving.

I just made this for dinner tonight, and it was wonderful! Instead of using heavy cream, I used nonfat sour cream and lowfat yogurt. And I sprinkled a little turkey bacon bits on top. Yummy!

This soup was delicous! Even my kids and hubby liked it! I only had to buy the asparagus b/c I had the other ingredients on hand. Easy and great!
