Apple Pumpkin Muffins

Vegan baked goods, perfect as grab-and-go breakfast.

Directions

  1. Sift then mix the dry ingredients in a bowl.
  2. Beat the wet ingredients together.
  3. Combine the two mixtures then add the grated apples.
  4. Divide the batter evenly into 12 muffin cups.
  5. Bake in an oven preheated to 350°F for 25-30 minutes.

These are really nice (even if our family is not strictly vegan!) We love pumpkin and will use these for more than breakfast. These remind us of the texture of a moist pumpkin bread.
