Quinoa Salad

A zesty, high-fiber dish filled with nutritious ingredients.

Ingredients

Directions

  1. Cook quinoa as directed on packaging. Let it cool.
  2. Wash and dice all vegetables.
  3. Open and rinse canned beans.
  4. Mix quinoa, onions, beans, peppers, celery, and cilantro.
  5. Slice and squeeze limes to get juice.
  6. Make dressing by combining olive oil, red wine vinegar, lime juice, salt, sugar and spices. Pour over quinoa mixture then serve.
