The trees look like they have been dusted with powdered sugar this morning. Yes ... a little snow.

The dog has already tried to be a lapdog (he is an 100 lb Doberman) and subsequently splashed my cup of coffee all over me and the desk ... fortunately only getting a tad on the edge of the computer.

Today is a stay home day I think. We had some things to focus on here. I am planning on cooking a pork roast today. I have not had one in years, maybe more than a decade!!! Not sure if I remember how to cook one!! I was thinking of throwing green beans, onion, and potatoes in with it (the potatoes are for DH). Any suggestions on seasonings or temperature and so forth would be appreciated. We'll have some kind of "eggs" this morning ... not sure what meat I'll use but I'll figure it out. We have bacon, chorizo, ham, and sausage available.

There was a smile on my face when I weighed in this morning. 203.2!!! Inching closer and closer to under 200. Okay ... so you are all right ... AGAIN ... it is "working" I just need to be patient! Seems like it is easier to cross my legs again too. Not sure if I am imagining this or it is really true but it seems like it is.

Oh and I did make cauliflower rice. Oh my goodness ... it was quite good!!! I cheated and bought "easy shrimp" ... you know the kind that comes frozen in a sauce? I was craving that buttery taste. No doubt I could have made it healthier but it was Friday after a long week and I wanted comfort food. But without rice? Oh no!!! Then I remembered Stef talking about making cauliflower rice. Looked it up and picked some cauliflower up at the market. I'm sold on it now. Dens tells me you can mash it up too ... sort of like potatoes? GRIN!! Yeehaw!!!

We have been thinking about vacation and our first choice is some place tropical like Costa Rica or Mexico but not sure we will have the finances for that sort of trip. So, we have put our thinking caps on and are trying to do something less expensive (unless of course money comes to us which it still may and we can have our first choice.) I believe I have some Southwest airline coupons I can use so that could reduce airfare substantially. And we belong to something called Interval International which has timeshares you can rent for a week at a fairly good rate. We've always wanted to go to Disney World. It looks like we could get a week for around $300.00 but I have no idea what to estimate for food, getting into the parks, if we would need to rent a car. I know several of you are Disney World buffs so I am open to advice!! Any way to cut costs and still have a great time!!

Tonight we'll set the clocks back an hour. Must not forget. Tomorrow I think we are going to check out the buffet at the Casino ... we have two free coupons for the buffet. I figure there should be plenty of acceptable choices for me at a brunch buffet.

I am grateful for ...

1. My buddies who persistently encourage me and bring me back to reality.

2. Hot coffee on a chilly morning (actually hot coffee on EVERY morning!!!)

3. Decent sleep. Not great, but decent.

4. The coffee spill did not splash up onto the keyboard on my laptop!!

5. How healthy my hair feels since I got it cut.

I like myself!! I love my body!! I am kind to myself. I take care of myself. I sleep well. Our wood shed is full. Our dental needs are met. We have money saved for a vacation in February 2012. I am a successful business woman and entrepreneur. I am an expert in my field and people pay me for my expertise. I earn $100,000 a year. I am organized and efficient. I plan well and follow through with my plans. I am persistent. I am determined. I am patient. I am responsible. I listen closely to my body's hunger cues and nourish it with the foods that support my metabolism to efficiently shed excess fat and weight. I handle strong emotion and conflict calmly. I accept responsibility for myself without being unkind to myself.

Today something WONDERFUL will happen to me!! And to each of you!!!

Have a wonderful weekend, day, evening ... whatever applies. Be good to yourselves. Me? Oh yes ... forever working on the very same thing ... being kind to myself (it IS a full time job!!!)

great journal...i bet that dusting did look like powdered sugar too!!! I'm daydreaming about sweets way too much!!Hope you have a magnificent day relaxing and being kind to you!
