katharsiss's Journal, 26 February 2019

Up a bit after my birthday, which of course included CAKE, my favorite! Also a lot of celebrating that did not include healthy choices. It's hard to eat right when you eat out, especially in Texas where everything is country fried this or that, or worse, delicious Tex-Mex! So it was fun, a big birthday--the big 6-0!--but I'm done and back to normal.

Motivation for me is reading websites about the Mediterranean Diet, or just Mediterranean food, or browsing one of the cookbooks I got for Christmas. Keeps me from getting stuck in a rut that leads to poor choices. Today I read about dates, how packed with fiber and other good stuff they are, so I chopped up half a date in my oatmeal instead of my usual jumbo raisins. Then I added half a cup of the greek yogurt I make in my Instant Pot with low-fat Promise Land milk--THE BEST!!!--and after tasting, added 8 drops of Trader Joe's liquid stevia extract (expensive, but worth it!) A few walnuts and some Mexican vanilla, and 2 minutes in the microwave. Pretty good and packed with protein.

My focus this week is on vegetables, fruit and fish. Bought some beautiful wild salmon, asparagus, zucchini, and lots of salad fixings. I'm boiling eggs for egg salad, making a big batch of yogurt, half of which I will strain for yogurt cheese. Ground turkey taco meat.
