Good morning everyone! I decided to weigh in this morning, up a few but that's not bad considering. I'm not unhappy with it.

Today I have a follow up doctors appointment and nothing else! No school, no work. A girl I work with asked me to cover her shift yesterday giving me an almost 12 hour day... before class! So I asked her to take my shift today in return, giving me a three day weekend. Hooray! Had a quiz last night, twenty out of twenty. I'm unstoppable lol. I'm getting more comfortable in class socially. I have been friendly and sociable, I think it's working lol. I do think I've got a couple 'haters' though. Such as life.

So because of my instructors conversation about sodium I decided to switch my FS log over to tracking my sodium intake. Recommended intake is 1500mg/day. Yesterday I ended at 2806. Surprisingly it was deli meat that did me in. I never realized how loaded with salt those processed foods are. Then last night we got to talking about cholesterol as we were discussing plaque build up in vessels. Turns out one egg yolk alone contains the almost the entire daily recommended intake of cholesterol (300). I eat sooo many eggs... My cholesterol yesterday was at 723, with over 400 of it being from two egg yolks. I'm trying to be more conscientious of what I'm putting into my body. I just lost all that weight, I don't want to clog the pipes now! lol I guess it all comes back to where I left off, needing to add more fresh fruits and veggies, leans meats and healthy fats. I will try to keep those thoughts in mind while I'm grocery shopping and planning meals for the week.

I wish I was rich, with a personal chef and dietitian to do all of the thinking for me lol. Alas, I'm not. Here is a heart and an eyeball, both of which were dissected by yours truly. Have a wonderful Friday!! :)

You know, I was talking about this w/Grace yesterday (rich with personal chef) and I'm not jumping on the 'let's bash celebrities' bandwagon but I cannot help but think about women like Oprah and Kirstie and they're wealthy financially but can't seem to keep their weight healthy consistently either. What happens there? I was standing in my kitchen musing 'I wish I didn't have to think and decide; I wish I could just pay someone to bring me a healthy nutritious meal whenever it was time to eat' and thought 'well.. what IS the answer then?' I don't have it... I was just sharing I don't think the personal chef is the answer either.

Wow what pictures! Next time I'm tempted with wanting something bad to eat I'm going to come back here and look at these pics, that'll take care of my appetite. Especially the disembodied eyeball staring at me! Hope it didn't wink at you. :)

I noticed that about the eggs too, if you like Egg Beaters it's like 1/3 the cholesterol and less fat/cals as well :) I'm also recently sodium-conscious, omg it's EVERYWHERE!!! So, I have my BS in Biology, I loved anatomy class! Those labs were the best, minus the smell of formaldehyde (still hate the smell). We never did a heart though, jealous!

Jim, it's kinda funny...when you have them out like that you can pull a tendon or ligament and it makes it move like it would if it were still attached to you...morbid, I know...but most bio science people are ;)

lol He didn't wink Jim, but I also didn't give him the chance. Right after my friend snapped that picture I cut out his Iris and popped out his lens :). That particular heart was dissected by a classmate, she did a rather sloppy job. Mine was much neater but I couldn't take a picture with my hands all dirty. No formaldehyde, Socolova. These organs were fresh from a local slaughterhouse. I have dissected brains that were in formaldehyde though, and that is a terrible smell! Bella, I have had those same thoughts, but I'm going to keep dreaming lol.

Yikes...making dead body parts move. Is there some kind of library where you can borrow them for Halloween and then return them the next day?

I eat lots of eggs in order to get the protein. Hmmmm. Kudos on your test scores. Want to thank you for educating us while you're getting yours. Had no idea about the cholesterol. Guilty as charged on the salt. Tomatoes without salt. Shoot me. Have a great weekend.

If you still want your eggs, you could take out the yolks. You still get the protein and they're only 17 calories each without the yoke. Sometimes when I make an omelet, I'll leave 1 yoke in from the 3 eggs to give it taste and color. Otherwise I make the omelet with 3 egg whites and fold in 1 piece fat free cheese.

I eat lots of eggs too. I think that you if exercise regularly, then it should help move the plaque along, should it? Good job on the school work! Enjoy your long weekend!

I discovered a couple of weeks ago that my blood pressure was up and started looking at my sodium intake too. Set my tracker up to show that and took out carbs (net carbs are more important anyway). I've managed to keep my intake down to under 1000 mg on most days but yes, it's amazing how much is in processed foods. And I looked at a can of peas last night. 300 mg per serving! I get the no salt added green beans. 30 mg. Huge difference. Now I'm being more careful. I eat eggs every day for the protein, but eat red meat only once a week max, so I figure it evens out, and hey, I'm 53. It's not like I have to worry about the next 50 years or so lol.

Msbuggirl, canned food is usually loaded with salt to preserve it. Check out the frozen veggies sodium content and compare it with the canned to see the difference.

I eat a fair amount of eggs as well. I switched to eating half the yolks a few years ago (my husband's bright idea for himself). Some people aren't really very affected by dietary cholesterol. People with the highest cholesterol tend to have an inherited mechanism whereby the body is too efficient at recycling cholesterol and/or just keeping it too high in general. When I was absolutely regimented about my dietary cholesterol intake, it didn't have much effect on my blood work. So, within reason, I eat as I please, exercise, and take fish oil capsules. Bacon and chicken sausage occasionally is not going to kill me. Besides, hate to say it, but you hear about these total health nuts that are marathon runners and the like, that keel over from heart attacks just like the rest of us. If it's going to happen, it's going to happen. Even thin people die of heart disease. Love the cool pictures! I remember well how excited I was to see organs up close. I grossed out my kids and husband describing them, lol.

Sounds like you are having a good time in class. Good for you! Most canned veggies, including peas, can be rinsed off in a strainer or colander which cuts back on the amount of sodium. It is better to bake a chicken or turkey breast and slice off what you want in a sandwich because of the sodium and nitrates. I am concerned about cholesterol too, but not to the point where it will keep me from eating one or two eggs every now and then. My understanding from all the research I've read is that egg yolks are processed by the body differently than other types of cholesterol in food (cheeses, etc) so it is actually good for you.

I'm pro-egg (yolk included as that's where there are many nutrients). If you don't have any liver problems or diabetes, dietary cholesterol intake from eggs (up to three per day---I think it is) do not appear to have an adverse effect blood cholesterol levels according to more recent published studies. Sodium intake is tough to regulate, especially when you're counting calories, fats, carbs, etc. Glad you're doing so well in classes, though there was never really any doubt you would be successful. H8rs gonna H8. Just keep on trucking along, Nurse Yolanda.
