Thankful!
Feeling great!
First pic I liked in years, and NO DOUBLE CHIN!!!! Who would have thought I had 41 pounds in my chin alone! LOL
Great weekend!
My Chicken, Broccoli and Tortellini Soup was wonderful! Great dinner for a spike day and I think it was low in calories too. We shall see tomorrow...figuring that out is gonna take a spreadsheet.
So, that means I am thankful for spreadsheets again!!!

GREAT new pic! The soup can be quite good for you. I came up with a chicken soup that I put tortelinni in (that's my kids fav pasta by far!) but I am still working on not over cooking it so I can freeze and reheat without it getting mushy. Have you frozen it?

I Just freeze it w/o the pasta. I like the thickness of the soup when you cooked the pasta in it but I ALWAYS make far to much and the soup will overflow if I had 1 more thing to it. I cook mine in a 12 qt and it was filled to the brim. I Served 5 people (4 guys and me & 3 of them twice), plus dinner for Sun night. That's 10 servings and the pan is almost half full. Still! And the bowls were huge too! I just don't know how to make soup on a small scale. LOL I am going to freeze whatever we have leftover tonight.

Yeha that's what I was thinking. Freeze it with out and cook it while the soup is warming though.

Great idea! So what is your chicken soup recipe? I love soup in the fall. I like to (well, I used too) like beef stew in bread bowls. YUM! No more beef for me though, damn my cholesterol!

Oh it's a "semi homemade" since I need things as fast as possible lol I buy an organic, low sodium premade chicken stock (I have no time to make my own even though I know it's easy, I do everything last minute lol), grill chicken breasts and maybe 2 thighs for just a bit of flavor, dice it up and toss it in and add in diced onion, celery and onion. Nothing fancy but easy to control as much sodium as possible. Then I split it in half and the kids get it with the tortelinni added in and mine get spinach. Nothing fancy but better than sodium filled canned soup.

I cheat with my stock too. I use Better then Bouillon Chicken Base with just water to control the sodium. The sodium for a huge bowl is 1300 ish. The chicken base is 400 of that. 730 per serving and there is .53 of a serving in each bowl. The tortellini and chicken is the rest! I never knew there was so much in the tortellini! I never grilled the chicken before. I just boil it in the soup. I never use thighs either, just breasts, to control the fat content. I add chopped celery and carrots to my other soups, small enough so that I will eat it. Can't use onion, but I do use a lot of garlic powder. I will try grilling it next time. Sounds yummy!

I kinda par grill it, grill it to about 75% done then dice it up and simmer it about 30 min to finish the cooking etc. The thighs add minimal fat considering it's 1 one in a whole pot (2 if they are little). I cook them after I remove the skin too and the kids are better about eating it with a bit more flavor. Of course I add pepper and spices, what depends on my mood. Easy Peasy!

Thanks Cindy! @ thynes...you know, I say no thighs because of the fat content...but I think that is only a VERY small part of it. LOL Hubby likes thighs but I prefer white meat...I am diabolical! So easy to start believeing anything if you say it often enough. :-)
