Yummy oatmeal muffins with just the right amount of sweetness.
Ingredients
Directions
- Mix the oatmeal and yogurt together. Let soak in the fridge for 30 minutes.
- Mix in all of the other ingredients.
- Optional at this point to spice it up by adding nuts, fruit, spices, or chocolate chips.
- Pour into paper-lined muffin cups (makes 12) and bake for 15-20 minutes (until tops are brown) at 425 °F (210 °C).

I just tried Strawberry "Yo Plus" yogurt (instead of vanilla) and 1 c of Splenda (instead of sugar), and it turned out great!

I think I'll stick with the regular flour instead of wheat flour... it tends to get a little dry with the wheat flour

this was pretty good....i cooked them at a lower temp so they could be less dry. I also put cinnamon and apples in mine. Delicious!
