Directions
- Cut tomatoes into chunks and remove seeds.
- Cook tomatoes and tomato juice for 30 minutes.
- Puree half the tomato mixture with the basil leaves.
- Add to remaining mixture and mix.
- Add remaining ingredients and cook on low until ready to serve.

Can not have the butter, sugar or half and half on Phase II

I think even if you replace the scant amount of sugar in this recipe with a sugar substitute it will still have too many grams of carbs for a lot of people in Phase II, although I suppose some can have this many. Tomatoes have lots of carbs from natural sugars and tomato juice has even more. Very high sodium in this recipe as well. It sounds really good though and doesn't have modified food starch that you might find in canned tomato soup. Maybe it's more suitable for people in Pre-Maintenance or Lifetime Maintenance who have a somewhat higher ACE.
