Saucy & Savory Stuffed Peppers
When you're in the mood for Italian flavors but want something more than a plate of pasta, look to these easy stuffed peppers instead.
Ingredients
Directions
- Heat the oven to 400 °F (200 °C).
- Heat the oil in a 10" skillet over medium-high heat. Add the sausage and cook until well browned, stirring often to separate meat. Pour off any fat.
- Stir the onion and oregano in the skillet and cook until the onion is tender. Stir in the cheese.
- Arrange the pepper halves, cut-side up, in a 3-quart shallow baking dish. Spoon the sausage mixture into the pepper halves.
- Pour the sauce over the filled pepper halves. Cover the baking dish.
- Bake for 40 minutes or until the peppers are tender.

I made this for dinner tonight - it was really good. We each had two servings. Since I substituted turkey sausage for the "regular" pork sausage it certainly helped the overall fat count. It made a wonderful main dish and I will definately make it again.

These were good, but I'd like more meat and cheese, but of course, that would just add more fat to the serving. The next time, if I made this for dinner, I'd add rice for more bulk.

I cut the recipe in half and added 1C brown rice (Thanks for the suggestion taxmanmk)and 2 cloves garlic. I will be making these again!
