This soup beefs up the health by using chicken with lean beef to lower the fat.
Ingredients
Directions
- In large pot, combine water, bay leaf, half of onion, green pepper, and 1/2 teaspoon of mint. Bring to boil.
- In bowl, combine chicken, beef, other half of onion, tomato, oregano, corn flour, pepper, garlic, and salt. Mix well. Form 1-inch meatballs. Place meatballs in boiling water and lower heat. Cook over low heat for 30–45 minutes.
- Add carrots, chayote, cabbage, and celery. Cook over low heat for 25 minutes. Add corn and zucchini. Cook for another 5 minutes.
Garnish with cilantro and rest of mint.

I tried this soup recipe and it was absolutely delicious, filling, and satisfying. A large bowl is only 3 points. Plus it made a big pot so I had enough to eat on for awhile. I even put it in the freezer. I used 93% fat free ground beef. Yummy!

Not good for O type diet as it has black pepper, cabbage, corn and corn flour, all no-no's

Not much flavor, too many ingredients, such as chayote and zucchini has about the same flavor, color and texture. I added a little hot sauce. Good color. Could add a little tomato sauce to give the broth more color. Instructions talk about onion but there is no onion in the list of ingredients. You have to assume you will be chopping up the vegetables before adding them. Corn flour was not found at my store, so I used white flour.
