Delicious Southern chicken dish that's terrific with pasta.
Ingredients
Directions
- Mix garlic powder, onion powder, oregano, paprika, black pepper, cayenne and salt. This creates the Cajun spice.
- Chop tomato, set aside. Chop peppers, onion and mince garlic. Cut chicken into bite size pieces.
- Add butter and olive oil to heavy skillet over medium-high heat. Sprinkle chicken liberally with Cajun spice.
- Add half of chicken and cook 2 minutes letting chicken sit, do not stir. Turn and cook the other side 2 minutes. Remove to a plate and repeat with remaining chicken, then adding to plate.
- Add peppers and onion and cook until they get a little color on them, 4 to 5 minutes.
- Add tomatoes and garlic cook 2 to 3 minutes. Remove veggies to a plate.
- Add chicken stock and cook until it reduces a little. Add heavy cream and stir to combine.
- Add chicken and veggies back to skillet stirring to combine.

This recipe has so much flavor, I can't believe I'm dieting.

I used fat free greek yogurt instead of heavy cream. More nutritional. And put it over whole wheat pasta. I really liked it but my husband didnt love it. He says I am a great cook and it wasnt my best. So since it wasnt a win for everyone i gave it a 3. Regardless of what he thinks I would make it again!
