ok friends, this is the best recipe ever:

ingrdients:
1 eggplant
4 roma tomatoes
2 garlic cloves
Grated Parmesan Cheese
Grated Asiago Cheese
Olive oil
Sea salt
Pepper
1 Slice of prosciutto

Prep:
1.Cut eggplant into 1/2 inch thick slices
2. Salt both sides of the eggplant and allow it to "sweat" for 10 minutes or so.
3. Cube the tomatoes and prosciutto
4. Mince the garlic (fine)

Instructions:

1. Heat 2 tbs of olive oil (i only used a little spray for my recipe) in a skillet at medium/high heat,
- add garlic first, let it saute for a minute
- add tomatoes and saute for another 2 minutes
- add prosciutto and saute for 1 minute.
- inmediately take off heat

2. wipe the water from both sides of eggplant
-place eggplants in a greased cookie sheet (again i used oluve oil spray on this)
-place eggplant under broiler until brown
-flip eggplants and broil until the other side is brown
-add Asiago cheese on top of eggplants and again brown until it is melted (less than 1 minute)

3. Take eggplants out of the oven and scoop the tomatoe mixture on top of each eggplant, sprinkle with parmesan cheese. and serve!

Voila!

I wouldn't know what heaven looks like but I'm sure there is a lot of 5 ingredient Caramel Haaguen-Dazs Ice cream there!

I started this week with a fresh outlook in life. Knowing that God will deliver me from ALL evils (including the guy who cut me off during my morning commute). I realized that what I need to control is my portions and so far so good. I have not exceeded my calorie intake (1,500) and tonight I even had a piece of heaven for dessert. (YES i am referring to the ice cream) I wanted to devour the whole pint and I am not joking.

Instead, like a good girl that I am, I measured the 1/2 cup and I even scanned the bar code with my phone BEFORE eating it. I can promise you I savored each and all of the 240 calories in that 1/2 a cup! I'm telling you it was all OF THAT and more.

My challenge is going fine. I was planning on going to the gym yesterday but for some odd reason (or divine intervention?) I forgot my sneakers at home. So today i made sure i didn't forget the precious shoes and headed out to the gym. As I was exercising i realized 30 minutes , 2 times a week is TOTALLY do-able! perhaps even more times a week.

But i wanna take it easy, perhaps after this challenge I can take up on a more challenging ummm.....challenge? (for lack of a better word, or thesaurus)
