One pound up is 'Reasonably Well' considering its been 121 days since I weighed in last, the last month of me baking away preparing recipes to be submitted for the Farmer's market this summer. But now the testing must stop and i need the next month and a half to take a break from sugar. I'm going to read Sugar Crush again to keep me in line and also have to prepare for another jaunt up the mountain when Amy gets here, so I need to start up with my daily hike again. I otherwise have been eating well and not really as much sweets around as you would imagine. I usually bring them to others or a party. I made some amazing no-sugar macaroons for Easter tomorrow, using dates for the sugar and they are fabulous. People everywhere want treats that are no-guilt. I created a few good recipes in that direction.Let me know if you want the recipe. Anyway, I'm back! Still with 35 pounds to lose. But I feel good. Eating a lot of asparagus and yogurt lately. And we want to get back to our green shake breakfasts.

Ohh thanks guys... and Happy Easter. Okay, I'll tell you here and then I'll put it in the recipes. Raspberry Macaroons 15 dates (soaked for 15 minutes in boiling water, then drained of most of the water, keep about 1/4 c. with them), 2 1/2 cups unsweetened flaked coconut (soaked 15 min. in boiling water, then drained), 3 egg whites, 1 t. vanilla, dash salt,1 cup fresh or frozen raspberries. Preheat oven to 325 degrees. In a food processor, process dates and 1/4 c. water until almost smooth. Add coconut and pulse 10 times. Add egg whites, vanilla, and salt. Process until well mixed. Then add the raspberries and pulse 15 times. It's okay if there is still marbling. Take out bowl and blade, and with a silicone spatula , scrape sides to fully incorporate. I used a small ice cream scoop to put on parchment covered baking sheet. (You can roll into balls in your hands.) Bake for 25 minutes until just beginning to brown on bottom of cookie. Let cool 10 minutes on parchment. They don't spread so i did all 2 dozen on one big cookie sheet. Delicious. Let me know if you make them.

So Kim, I just looked at your diet history and it barely went up over all that time! Good job!!! Glad that you are back with us!
