Sooooo close to leaving the 200s! I know I may go up again before I go down, that's the norm. So I may not even weigh for a few days.

I was very hungry this morning so made one of my favorites: Poor man's "souffle". Open a can of spinach and drain in colander. use the side of the empty can to mash the spinach and remove more of the water. Then put the spinach in a saucepan or skillet and cook until hot and more of the moisture evaporates. Add a little oil in a well in the middle and crack in a couple of eggs. Begin to scramble the eggs. When they are starting to set, stir them into the hot spinach. Stir and turn until all the egg is cooked and distributed thoroughly through the spinach. You may add grated parm or swiss cheese at the end if desired.

It took me longer to write out the instructions than it does to make this dish! It's yummy and fast and filling. And yeah, I eat the entire thing all by myself! I'm a morning eater, love my breakfasts and lunches. Often I do not eat after lunch, and if I do it's usually very light. i wind up giving most of it to the dog because I'm just not hungry at night.

I'm thinking of everyone who is struggling this morning and praying for you to think kindly of yourself. Consider what works best for you, and at what you excel. Write it down, put it in a "Warm & Fuzzy" file. Then employ one thing from the list. Just one will be enough to make you feel that you are making a difference in your own life.
