just another lettuce idea for CJ. I add lettuce to soups. This time it was spinach... but kale or any lettuce works as well. It is my version of an Italian Wedding soup (made with turkey meat balls just boiled into my turkey broth) I am in a wedding kind of mode these days LOL

Greens in soups -- one of my faves!

I love adding kale or other dark greens to soup. They add a nice complexity.

I often forget to add kale or spinach but it is a great way to get your veg in. Nice adding to stir fry too!
