Found the wonderful world of Summer and all its delicious low carb/calorie squashes and its amazing recipes. I tried to make the Ratatouille (like the movie) and it came out FABULOUS!!! Good thing my husband doesn't eat dinner here or I would fail this diet by far!!! Tonight I made Breaded (yes breaded, I know I know) Eggplant and it was delicious. My son (12) just LOVED it! I weighed myself this evening and I weighed less then I did this morning so I am hoping for a low weigh in tomorrow morning.
