SO, I have made it through the Memorial Day weekend without sabotaging my low-carb lifestyle! Nick224 and I celebrated a very quiet holiday amongst ourselves (and our dogs). Both of us have been suffering a horrible head-cold this weekend, so most of the time we just kept things extremely low-key. Today I made a FANTASTIC new dessert: low-carb, no bake, Peanut Butter Cheesecake. IT IS DIVINE!!!!! (and it was SUPER easy to make). Now, just to get this cold over and done with and I will be one happy camper.
