Day 38: I love veggie broth! I feel full and eat less. :P

Question: How to eat oatmeal? Any easy recipes? I bought some, but then I realized that I have never cooked oatmeal before...

If you have a microwave put it in there for 90 seconds with milk or water. I think it's roughly half a cup of milk/water 125ml for 40g of oatmeal!

You can do it on the stove too just boil the milk/water and put it in and stir it for about 10min!

I really stay away from the stove if I possibly can, so I don't cook my oatmeal. lol You can put 1/2 cup oats in a bowl [that is safe to use in the microwave] and pour on about 6 ounces of boiling water. Cover the bowl with a plate that can be used in the microwave [it can take the heat of the boiling water] and let the oats absorb the water for about 8 minutes. Stir it and if it looks too thick, add a little water. If it is too hot, you can add an ice cube to cool it off and make it less thick at the same time. :D

Somebody on FS gave a link to oats that are prepared and kept overnight in the refrigerator. I wish they would post that again. I might try that!

I LOVE using steel cut oats ( they are like little tiny pebbles when you buy them) and cooking them overnight in a tiny crock pot. They absorb a ton of water ( 4 c. of water to 1 c oats) but come out thick and creamy. Lovely with some skim milk and sweetener ( agave... stevia... raspberry preserves) on them. I make a whole batch and then microwave one serving at a time each morning to reheat.

Is it instant or old fashioned oatmeal? I'd say to cook them with mostly water and a little milk or milk alternative to give them a little more body. I usually add a little bit of sweetener or even some maple syrup and cinnamon. Depending on what's in season I usually add some sort of fruit. I hope the info helps.

You can add the low calorie coffee creamers to it for flavoring.

I like to flavor with any flavor you prefer, Polaner's All Fruit and chopped walnuts... yummy!!! :)

One other thing that I've been adding is a tablespoon of chia seeds which are so healthy.

If you add one honey pitted date (sold as Parnoosh) chopped up you get some sweetness without adding refined sugar.

Using Irish cut oatmeal. I like to use it without milk as grits and have your fruit and protein to the side. Season with salt and pepper. The new way I am having it this week is to put a serving of almonds in the bottom (28 g) of a bowl, add hot oatmeal, top with 1/2 apple peeled and chopped, and add just a little almond milk ( I am vegan). Could add a sweetener if desired like agave.

I've been adding 2-3 pasteurized egg whites to my hot oatmeal (oats cooked 2 min in microwave). Egg white creams it up (like milk would day), pretty much flavorless, and adds a hefty protein boost. I also make a few recipes with oats (a few posted in my FS Cookbook) Banana Oat Breakfast Muffins and Cinnamon Granola Clusters which my family loves as a snack or yogurt addition -- SO tasty, I never buy the store brand granolas or bakery items anymore. Also, if you need an approved 'cheat' treat, you could do worse than an dark agave- or turbinado sweetened Oatmeal Raisin Cookie. No will power to not eat a dozen? Find a recipe that makes just one thick, microwave cookie at a time. These thick cookies can also double as a quick breakfast when time and patience are an issue. Good luck! p.s.> I LUV veg broth too! When not homemade, I use Reduced Sodium Kitchen Accomplice <kitchenaccomplice.com> from HEB.

I love the no-cook refrigerator oatmeal! I make it ahead of time so I have breakfasts or snacks on hand when I'm on the go! A great basic recipe is here (but I add frozen berries, or other ingredients to change it up): http://ohsheglows.com/2010/04/08/easy-vegan-overnight-oats/
