So I got up this morning and ran to Whole Foods because they were having a 2for1 sale on prosciutto. So... now I have a pound of it. So I made the cheese pizza crust that Karen mentioned on ASM.

Basically you put grated mozzarella and cheddar cheese together with an egg and bake it for a while then add the toppings and run it under the broiler. So I found some fairly low carb spaghetti sauce (3g carb per 1/4 cup) and made myself a prosciutto pizza. It wasn't *totally* like pizza but it was pretty good. I'll be interested to eat the other half cold and see what that is like. I am a cold pizza for breakfast sort of gal. *grin*

And it will be interesting to have the sauce to dip things in for a few days instead of my usual blue cheese dressing. I got zucchini & summer squash and I may do them in the sauce too. Nice to add more flavours to the mix.

Mmmmm, that sounds really nice. I will have to try that. Are you using the zucchini like noodles or just dipped in the sauce?

sounds great! I don't really cook too much since being on Atkins. I need to find more recipes and try more. I do LOVE cooking but just have had so little time lately. The zucchini and squash sauteed with a little onion and garlic, and add a little sauce, would be good over a burger or maybe even a piece of fish. I also love stuffed zucchini with ground beef and cheese. You could even top it with the sauce or maybe a low carb Alfredo sauce...yum!!

Oooh, Tammy, zucchini stuffed with ground meat and cheese sounds great! I haven't been cooking all that much either but I think I'm getting to the point where simple food is getting boring and I don't want to have that encourage me to go off plan. Mmm, I'd forgotten about zucchini noodles, these are just sliced. But thanks for the reminder that they can be sliced noodley. *grin*
