I FEEL fat. Stupid work potluck yesterday... My manager made queso dip w/ sausage in it. Oohh, so good... Evilly delicious. I also had a cupcake. And a (very small) piece of chocolate pie. I only had one soft taco for dinner (homemade, not fast food). I walked about 2 1/2 - 3 miles while at work and then did 30 mins on the elliptical and some arm work at home. Hopefully it was enough to prevent a real gain. Didn't weigh this morning, as I'm sure the sodium would have showed a gain.
Really need to get full-on 100% back on track. Told the fiance nothing but salad until Christmas (after Thanksgiving, of course). I have two dinners tomorrow. 1pm and 5pm. I can't promise I'll stay away from all the really bad food, but I will certainly keep my portions in check. I know green bean casserole is one of the worst... but it's one of my faves! And pumpkin pie... Mmm.. Maybe I should just have those two dishes? Ha!
I am making a strawberry pie. Mom gave me a bunch of recipes when I went to visit. She says the filling isn't too impressive (just frozen strawberries in syrup and Cool Whip) but the crust is what makes the pie. It's made with Ritz crackers. Also, the peanut butter puff cookies! I am going to share this one because they are actually pretty diet-friendly. About 60 calories per cookie, and less fat since there is no egg yolk. Recipe makes about 12 cookies.
1/4 cup creamy peanut butter 1 egg white 1 dash salt 6 tablespoons sugar
Whip the egg white w/ the dash of salt until soft peaks form. Gradually add sugar until stiff peaks form. Then fold in peanut butter. Place on greased cookie sheet, bake at about 325 degrees for 15-19 mins.
Mine were a little too crispy on the bottom because my oven runs hotter than the dial says. Stupid apartment oven... Anyway, if you love PB cookies, those are just soo yummy!
