Last night was another awesome dinner! I baked boneless chicken breasts in the oven that were smothered in garam masala. And I made sure that I ate a 4 oz. portion, nothing more. (I guess I never realized how big of portions I had been previously eating. I'm starting to finally realize what a proper serving size/portion size is.) Then I had the leftover green beans from the night before and a little bit of canned corn. (Usually I add a BUNCH of margarine/butter to my veggies, but I haven't added any to my veggies this week!) But the best part of the meal was the homemade raita that I made. Raita is an Indian dish that is surprisingly easy to make (and SOOOO delicious!). It consists of fat-free plain yogurt, chopped cucumbers, a pinch of salt and sugar, paprika, cumin, and peppercorn. I always order raita when I am out at Indian restaurants, but I had never made it myself. Now that I am forcing myself to eat healthier, I have been making new and exciting dishes!
