A delicious, easy to make taco soup to keep in your back (or front) pocket.
Ingredients
Directions
- In a large saucepan, cook turkey until browned. Drain off fat.
- Stir in broth, beans, tomatoes, and taco seasoning.
- Bring to a boil over high heat; reduce heat and let simmer, uncovered, for 15 minutes, stirring occasionally.
- Stir in corn.
- Serve with tortilla chips, if desired

This soup is outstanding. I made it last night and it was delicious. I used Southwestern corn (that's what I had on hand), added some Frank's hot sauce and 1 tsp garlic powder and my seasoning packet measured 1.25 oz; otherwise changed nothing. I found that a serving is about 1 to 1 1/2 cups is a serving. (I ate a serving and 1/2 it was so good. Thank you healthy_living.

I made this for dinner and thought to myself: man, I need to tweak the seasonings for this. The day after, I had the soup leftovers for lunch. After sitting in my fridge for a day this was phenomonal. I still plan on tweaking the seasonings a little, but the only thing i would reall change would be the name of this recipe. It should be called Tomorrows Turkey Taco Soup.
