Very easy and tasty lentil soup.
Ingredients
Directions
- Clean and rinse lentils, place in pot and add chicken broth, bring to a boil and then simmer and cook until lentils are soft but not mushy.
- Chop turkey bacon into small pieces and brown in pan with cooking spray (Pam) add minced garlic and fry until garlic is golden, add tomatoes and cook until tomatoes are soft.
- Once lentils are cooked add bacon mixture, pepper and salt to taste.
- Cook for additional 10 minutes. Serve hot.

Not very soupy, but very tasty! Let the lentils simmer with the bacon mixture for a little longer and it had great flavor! I recommend this, but more for a side dish of beans than as a "soup".

Definitely full of flavor, but not very soup-like. I did enjoy it as a side dish, but found the lentils a bit "al dente" for my liking. I will definitely add more chicken broth next time I make it, either enough to cook the lentils further or enough to make it a soup.

Not enough broth to cook the lentils let alone make soup. Too much pepper listed in ingredients. Pam not added to ingredients. Would not add salt until completely done so lentil skins don't get tough.
