Eggplant Kiku

Delicious meatless dish.

Ingredients

Directions

  1. Mix eggplant with salt and let stand for 1 hour. Rinse well and dry.
  2. Sauté eggplant in oil in small batches. Mash eggplant with a potato masher.
  3. Sauté onions until golden and add to eggplant.
  4. Beat eggs with other ingredients. Add to eggplant mixture.
  5. Pour into oiled 9" baking pan and bake for 30 minutes at 375 °F (190 °C).
