I'm back!! I just returned from serving on a girls Chrysalis flight. It's a 3 day Christian retreat for teenage girls. Spiritually I'm beyond amazed at God's amazing grace. It was a very powerful weekend. Physically I'm drained beyond words. I need at least 8 hours of sleep per night, 9 is even better. I only got 5 very restless hours on Friday night, 5 on Sat night & 4 on Sunday night. Food ~ well lets just say it wasn't Paleo! I had talked with the cook for the weekend on Thursday. We had a girl attending the walk who is severely allergic to gluten so he was making changes to the menu. For me, I thought this was awesome because then I wouldn't need to pack food. My focus for the weekend was sharing God's love with these girls, not food. Unfortunately he didn't change the menu. So I only did 'ok' with food and then of course felt like I had a brick lying in my stomach all day yesterday.
But ~ I'm getting back onto the Paleo bandwagon today! I'm looking forward to feeling better.

Blood glucose 1 hour after last meal: 91
3rd full day without any Splenda in my coffee or anything else.
Extremely tired today - just wanted to sleep. Occasionally thirsty / dry mouth & funky taste. Bought some keto sticks & officially confirmed I've entered ketosis. Yeah! Working it baby!!

We have the potential for an emergency situation in the Taylor household: No pistachios, no cashews, no pecans, no L-Carnitine, and only enough fish oil to last me a day & a half. But don't worry ~ we still have almonds, coconut & coffee.
Food not listed in food diary: Lunch - Toni's quiche. Toni tries to tempt me with fruit, but I said no! I still love her. =) I'm also surviving another day without splenda. Woo hoo!

Also ~ survived the day without supplementation of any Splenda in my coffee or any of the food I ate. Woo Hoo!
Interesting note - I found a copy of my blood work done in June 2005, when I was 'diagnosed' with Chronic Fatigue. FASTING blood glucose was 104! At the time I didn't think it was a concern because my doctor never said anything about it. I remember thinking that I would do anything to realize the symptoms I was dealing with. A change in diet would have been much easier to deal with than the side effects of the drugs I was placed on. I'm so glad I know better now. Thanks pcf!

Weight gain result of inflammation from variety meal the evening before?
I think I had just as many carbs on one plate than I ate the whole week before.
Good news is that body fat went down 1%.
